Seedy Sweet Potato Damper Bread

Ingredients (Serves 8)
2 cups self raising flour
1 cup mashed sweet potato
Half cup mixed seeds (sunflower, sesame, linseed, pumpkin)
3/4 cup milk
60gm butter

Method

Rub butter into flour, stir in half the seeds, sweet potato mash, and milk.  Knead briefly,
shape into 8″ round, sprinkle with rest of seeds, partly score into 8 pieces.  Bake in oven
200c for 30-40 mins until sounds hollow when tapped underneath.
