Sundried tomato paste
In a heavy based pan gently fry the onions and garlic. Add the sundried tomato paste and
chopped skinned fresh tomatoes (if needed substitute for tomato puree and tinned tomatoes).
Shell the borlotti beans and add to boiling water. Bring the water back to the boil. After a minute drain the beans and add to the tomato sauce.
Simmer for about an hour to allow the beans to absorb the flavour of the tomatoes. Season to taste.
Try adding chopped chorizo to the onion and garlic or some belly of pork!
